 To keep tabs on every New York restaurant and bar opening is folly. But to keep tabs on the most worthy? Yeoman’s and we’re proud to do it. Thus we present Table Stakes, a monthly rundown of the five (or so) must-know spots that have swung wide their doors in the past thirty (or so). Bon appétit.

You’re here : It’s a non-vegan restaurant headed by a chef who himself is vegan, which translates to an emphasis on super local, ethically raised food.
You’re dining on: Fresh, house-made sourdough, for starters, followed by a ribeye, kabocha and cured wild snapper. And for lunch: the dry-aged burger.

You’re here because: Head Baker Tetsuya Yamaguchi and Chef Joël Robuchon have 31 Michelin stars worldwide between ‘em. Not too shabby.
You’re dining on: Two nine-course tasting menus: “Le Menu Decouverte de Saison” and “Le Menu Végétarien,” with signature dishes such as Le Burger with foie gras and sautéed bell peppers, and Le Caviar with king crab, shellfish and cauliflower cream.

You’re dining on: “Snacks” like chips and dip with chicharrones and chicken liver mousse, along with divine mains like carrot agnolotti with lamb neck and lobster. And kick things off with a Gold & Delicious: apple brandy, Japanese whiskey, almond and Castilian bitters.
