Bi bim bop.

Literally: “mixed rice.”

Practically: a Korean hodgepodge of sautéed veggies, chili pepper paste, doenjang (soy beans), meat and egg over rice.

Shorthand: eyes-roll-back-in-your-head delicious.

And here’s where to find the best bi bim bop in the Chi: Parachute, the new joint by Top Chef alum Beverly Kim and husband John Clark, now dishing out destination eats of the Korean-American variety in Avondale.

Parachute is a 40-seat eatery with a laid-back vibe — natural woods, exposed brick and a communal central bar, with vintage speakers lining the wall for an eclectic touch.

Kim and Clark plate everything up in an open kitchen (view the full menu here), turning out standouts like the pork belly mung bean pancakes alongside a bi bim bop served with short rib and topped with a slow-cooked duck egg.

Order a few plates. Share. They all make for good conversation.

As for your drinks, start with a payet pisco. Move on to the extensive wine list, which you can order by the glass or the carafe.
