The joys of cold brew are far outweighed by the effort.
First up: It’s not hot coffee poured over ice. That’s too easy. And bad.
Cold brew involves coarsely ground beans mixed with room temperature or cold water left to steep for 12-15 hours. The final result is a buzzy concentrate that’s super smooth, not bitter or acidic.
Or at least, that used to be what cold brew involved. Now, there’s a new workaround. And it cuts approximately 11 hours and 52 minutes off the prep time.
Using a “specialized vacuum infusion” process, just-launched device Prisma (formerly known as Pique) claims to have hacked cold brew down to eight minutes and a single button push.
As Engadget points out, vacuum infusion is a known process, but it requires a “vacuum chamber machine,” which is very much not a kitchen staple.
The process for Prisma, a rather handsome machine, is easy enough: Add finely ground coffee and water. Stir a bit while they’re both in the filter (it uses standard-issue basket filters). Press button to begin extraction. Wait eight minutes for the cold brew to drain into the glass carafe.
Prisma is the work of FirstBuild, a co-creation community backed by GE Appliances, and Sunergos Coffee, a nationally renowned coffee shop and roastery.
It’s currently going on Indiegogo for $229, or about $50 off the MSRP.
