- 1 avocado, diced
- 1 red pepper, diced
- 1 jalapeno, seeded and diced

In a large mixing bowl, stir together the soy sauce, rice vinegar, sriracha and honey. Toss tuna in the sauce and let sit for 15 minutes.

Preheat an air fryer or oven to 350°F. Slice wonton sheets in half diagonally, then cook 3 minutes in the air fryer or 7 to 8 minutes in the oven until brown and crisp.

- 1/2 cup crème fraîche

- 2 oz. pancetta, diced

Place the sweet potatoes directly on the oven rack and bake for about 45 to 60 minutes, or until they are tender when pierced with a fork. As the sweet potatoes cook, in a small pan over medium heat, cook the pancetta until crisp, 10 to 12 minutes.

Once cooled, cut each sweet potato in half lengthwise. Carefully scoop out most of the flesh, leaving about 1/4 inch of sweet potato attached to the skin. Brush the inside and outside of the sweet potato skins with extra-virgin olive oil. Season the insides with salt and black pepper, and evenly sprinkle on the grated Gruyère cheese. Return them to the oven and bake for an additional 8 to 10 minutes or until the cheese is melted and bubbly.
