Despite Brooklyn’s affinity for all things Scandinavian — shawl-collar sweaters, lush beards, Miike Snow — they forgot the most Nordic of things: the beer.
Thank Odin, then, for Tørst: a sudsy Valhalla claiming to have “the craziest beer menu in the US,” open now in the heart of Greenpoint.
This is Copenhagen-meets-Kings-County.
From Evil Twin Brewing founder Jeppe Jarnit-Bjergsø and Momofuku Labs alum Daniel Burns, Tørst boasts 21 wood-handled taps that work off a sci-fi “flux capacitor” system (one of three in the world) that allows Tørst’s crew to precisely mix CO2 and nitrogen for individual brews.
Beyond the 21 taps, Jarnit-Bjergsø also stocks 150+ über-rare bottles. A few of his favorites:
Beachwood Brewing Laurel: a “crisp, floral, hoppy” IPA from the California inventor of the flux capacitor system. Tørst’s the only place serving it outside of Orange County.
Evil Twin Even More Jesus: a super-concentrated pils with notes of chocolate, Scotch and espresso – “like liquid chocolate cake.”
Tilquin Quetsche: only 500 bottles of this barrel-aged Belgian plum lambic were made – “tart, funky and fruity. We’re the only people in the world who have it outside the brewery.”
Soon, Tørst’s back room will debut as a 26-seat resto where Burns (also of Fat Duck and Noma) will offer a five-course tasting menu with specialty beer pairings.
