Chef Jeff Mahin slings Midwest comforts like bison meatloaf and flat iron steak frites, but it’s his lighter, seductive dishes that steal the show.

Hamachi Tartare with Green Apple: The kind of fish you can eat all day at the beach. Incredibly fresh, strangely addicting.
Fresh Burrata: Di Stefano burrata flown in from L.A. Mahin’s signature housemade bread. Win-win.
Japanese BBQ-Glazed Skate Wing: A skate wing fillet nestled on soba noodles and a delicately complex dashi broth.
And a bottle of 2012 Chamisal Stainless Chardonnay pairs well with all three.
