For those jetting to Vancouver, British Columbia, the Fairmont’s ARC restaurant in is offering a pair of options for New Year’s Eve dinner. Guests can choose from an early seating starting at 5:30 p.m., featuring an extravagant three-course dinner; or a late seating starting at 8:30 p.m., which includes a four-course meal (plus live music). Cosmopolitan of Las Vegas

The Cosmo is packing the most A-list star-power of all the parties on this list, playing host to not one but two Grammy Award–winning performers on New Year’s Eve weekend (festivities begin on Friday, because it’s Vegas, baby). On Dec. 30, you won’t be able to feel your face once The Weeknd takes the stage at The Chelsea, the hotel’s concert venue. Hitting the same stage the following night will be former Police man Sting, who will usher in the new year belting out all the classics, including a smattering of tunes from his latest album, 57th and 9th. South of the border? Look no further than Riviera Maya, where Fairmont Mayakoba is hosting a three-pronged, Mexican-style New Year’s Eve celebration. For the all-night dancer, one of the resort’s pair of restaurants, La Laguna, is hosting a salsa party. Brisas, the other one, is staging a poolside fiesta, with food stations and à la carte service, along with accompaniment from a Caribbean band. If you find yourself in Chicago on New Year’s Eve, the historic Palmer House hotel has tiered options for the would-be reveler—depending on how over-the-top you want your night to be. We suggest going right for the gold, with the $5,000 “private hospitality” option, which offers you a private bartender, security guard, and VIP tickets for 12 friends to an exclusive New Year’s Eve bash. Waldorf Astoria New York

Be a part of the Waldorf Astoria’s last New Year’s Eve celebration—at least in its current form. (The iconic New York City hotel is set to close temporarily next spring to undergo a major restoration/renovation.) On the big night, the Waldorf’s steakhouse, Bull and Bear, is hosting a five-course prix fixe dinner menu, featuring a number of its classic dishes (reservations can be made between 7:30 p.m. and 10 p.m.). If you have tickets to the main event, that’ll be over at the Waldorf’s historic bar, where there’s open bar, a live band, and dancing until 1:00 a.m. (plus party favors). The Bull and Bear is also offering up an exclusive option for whiskey enthusiasts, who can splurge on a $3,500 dram of Balvenie 50 (it’s the only spot on the eastern seaboard where you can enjoy this rare treat).
